Dry cured by hand in very small batches in a mix of salt, star anise, orange zest and muscavado sugar, these gammons are produced from the neck fillet of traditional breed British pigs. They are beautifully marbled throughout and hold their moisture amazingly for the duration of the cooking process. We advise baking these gammons in a lidded casserole with an inch of apple juice or preferably cider! They need no soaking prior to cooking.
